After 50 years of cooking, I feel I have come to the point of knowing exactly what I want to bring to people's palates.
For 40 years, I have been a mad forager, and food from nature is my most inspiring topic. Here at the Western Cape in the heart of the Floral Kingdom, the varieties of plants that are growing right in front of our doorstep are unique. - Dune Spinach, Wild Sage, Cancer Bush, Buchu, Geranium, Confetti Bush, Sea Weed, Bitter Bush, and lots more...
My kitchen will show these indigenous plants as ingredients in starters, main dishes, and desserts. For me, there are some simple rules to create a perfect dish:
First: Don't use more than three main components. Too many flavors will mutually neutralize each other.
Second: bring the five human tastes of Bitterness, Sweetness, Sourness, Saltiness, and Umami into one menu.
Third: Optic shouldn't dominate the taste. What is a lovely dish if it is not tasty?
Fourth: Try to rebuild nature, don't play around on the plate, and start to paint or build....we are not artists; we are still chefs.
And in the end..... a restaurant is a place of happiness where people should meet, forget about the outside world and enjoy life. - You will forget a dish, but you will never forget a wonderful evening with people you love!
